The production of this oil is associated since the beginning to the quality. This farm is associated to AIPOL and DOP of Lombardia Lakes region. Over the last years 150 olive-trees are voted to production even if many of them are doing it since centuries. Crop is 100% hand made using pierced boxes to let breathe olives.
 
After washing and cleaning , olives are traditionally pressed. Only the first phase of pressing process will become extra virgin olive oil. Then we let the oil rest. Time will ìfilterî this oil leaving a great flavour. Olive-tree are : Leccino , Frantoio and Pendolino. This misture of trees create a great flavour of artichoke and a soft back-taste of almond.
